Cold Sesame Noodles
Ingredients:
12 ounces whole wheat spaghetti
1/2 cup reduced-sodium soy sauce
2 TBSP sesame oil
2 TBSP canola oil (or other light oil)
2 TBSP Rice Vinegar
Sprinkling of crushed red pepper – to taste
1 tsp fresh ginger, peeled and grated
1 bunch of scallions, thinly sliced on diagonal
1/4 c chopped fresh cilantro
1 red bell pepper, sliced thin
1/4 piece of red cabbage head, sliced thin
2 large handfuls matchstick cut carrots
1.5 c shelled frozen edamame
1/2 c toasted sesame seeds
Directions:
Cook pasta according to directions. Drain and rinse under cold water.
In a bowl, whisk soy sauce, sesame oil, canola oil, vinegar, red pepper flakes and ginger. Prepare the vegetables and toss into the bowl of dressing, mix well. Then add the pasta, and toss again. Top with toasted sesame seeds.
Chill and serve cold. It is so PRETTY!
