Easy Mexican Rice
Ingredients:
1 TBSP refined coconut oil (or oil of choice)
1/2 large yellow onion, chopped
1-2 cloves of garlic, minced
1 bell pepper (I use red, but any color will work)
1 c. short grain brown rice
1 3/4 c. broth/stock (veggie or chicken)
1 TBSP tomato paste
salt and pepper to taste
Directions:
Heat oil in a skillet over medium heat.
When hot, add onion and garlic, and saute until softened.
Add bell pepper and saute until softened.
Add rice and toast for a couple of minutes, stirring constantly to avoid burning.
Add in tomato paste, and stir.
Add in the broth/stock and bring to boil.
Once boiling, put a lid on it and lower heat down to a simmer. Simmer for 50 mins (or whatever your particular rice directions state).
After simmering for 50 minutes, turn heat off and let sit with lid on for another 10 minutes. Fluff with a fork, salt and pepper to taste and serve!
