Whole Wheat Honey Banana Bread
Ingredients:
½ c. unsweetened applesauce
½ c. honey
1 tsp. vanilla extract
2 eggs (I’m fairly certain flax eggs would work as well, I just haven’t tried it yet)
2 ripe bananas, mashed
1 ¾ c whole wheat pastry flour
½ teaspoon salt
1 tsp baking soda
¼ c. hot water
½ c. chopped walnuts (optional)
Directions:
Pre-heat oven to 325 F
In a large bowl, mix the applesauce and honey together. Add the eggs, and mix . After fully incorporating the eggs, add the mashed bananas and vanilla extract. Mix well. Then add the flour and salt, and mix again. In your measuring cup, add the baking soda to the hot water, give it a stir, and then add to the batter. Fold in the nuts, if using. Give your loaf pan a quick spray with your non-stick spray of choice, and spread the batter into pan.
Bake for approx. 55 to 60 minutes. Test with toothpick to make sure it is fully cooked. Toothpick should come out clean.
Cool in pan on wire rack for 10 mins… then loosen edges with a butter knife, invert to remove loaf and cool loaf on wire rack about another 30 mins before slicing.
Makes one loaf. Can also be made into muffins, but only cook those 20-30 mins depending on your oven.
